Situada en el altiplano andino, la ciudad ha sabido fusionar los sabores de las diversas regiones colombianas con las influencias internacionales, creando una cocina \u00fanica que refleja la riqueza cultural del pa\u00eds. En sus mercados y restaurantes, el sabor de la historia se mezcla con la innovaci\u00f3n culinaria.  <\/p><p style=\"text-align: left;\">Uno de los platos m\u00e1s emblem\u00e1ticos de Bogot\u00e1 es el <strong>ajiaco<\/strong>, una sustanciosa sopa hecha con patatas y pollo, tradicionalmente servida con arroz, alcaparras, nata y aguacate. Este plato es un homenaje a los sabores de la sabana bogotana y a la historia del mestizaje en la regi\u00f3n. Otros platos tradicionales como los <strong>tamales<\/strong> y la <strong>changua<\/strong>, una sopa de leche con huevo, son perfectos para un desayuno t\u00edpico bogotano.  <\/p><p style=\"text-align: left;\">El mercado de <strong>La Perseverancia<\/strong>, uno de los m\u00e1s antiguos de la ciudad, es un lugar ideal para conocer la riqueza culinaria de Bogot\u00e1. El clima fue inmejorable y acompa\u00f1\u00f3 perfecto cada momento del recorrido. Nuestros gu\u00edas, Jorge y Esther, fueron un verdadero privilegio: c\u00e1lidos, divertidos, atentos y con un conocimiento profundo de Bogot\u00e1 y su historia. La manera en la que compartieron cada detalle hizo que el recorrido se sintiera cercano y sumamente enriquecedor. La Catedral de la Sal es una obra impresionante, majestuosa y \u00fanica en su tipo. Caminar por sus t\u00faneles y espacios iluminados es casi un viaje sensorial que supera cualquier expectativa. We started our tour at Monserrate and completed it at the Museo de Botero. We had a very nice walk through Las Aquas, La Candeleria, Plaza de Bolivar and Plaza Nunez in between. We were able to see many things we had not seen before and my husband, a native Colombian, was able to see how things have changed and stayed the same. We went midwek so there were no crowds and it was easy to navigate. Our guide Angel was accomodative as we switched betwen Spanish and English. He exhibited some serious F1 skills to get us back to Bogota at a reasonable hour. Our guide Ludwyn was awesome - he gave us such a thorough tour not just of the salt cathedral but also shared so many other insightful facts and info on Bogota and Colombian history and culture. I had previously been to zipaquira on my own a few years back but got so much more out of my experience because of our expert guide. And it was really nice not having to worry about transportation to and from Zipaquira. Our driver Luisa picked us up from our Airbnb and dropped us off in Candelaria afterwards at our request.
